SUBJECT: Projekt Rosewood: Phase 3 – Food Service

As part of Phase 3 of Ore Dock Brewing Company’s Projekt Rosewood, internal renovation of existing spaces will be initiated.  This renovation will include the build-out of an on-site commercial kitchen.  The purpose of the commercial kitchen will be to provide:

  • Food service operation to current tap room services.
  • Facilities to support catering of events held on-site through the venue operations.
  • Support and operation of on-site food truck operations for the outdoor patio space.

To facilitate this phase and effective ongoing operations, Ore Dock is looking for a well-rounded, team-focused, passionate kitchen leader/chef.  This leader will be critical in shaping and driving the development direction through the final phases or operation.

Known/defined parameters include:

  • Taproom
    • Foodservice that compliments the craft beer industry
    • Execution of an efficient fast casual model
      • Counter order, seated delivery
      • Ticket Times < 15 minutes
      • Capacity less than 30 tickets per hour
    • Craft food focus
      • Food direction (not final)
        • Local cuisine with craft, fresh, local culinary influence
        • Consideration of the local food market, trends, and demographics
      • A component of operations to begin in Q3 of 2024, full operation to be in place prior to 2024 year-end
    • Venue
      • Facilitation of catering for events from 20 – 400.
      • Service model for packaged, buffet, family-style, table service
    • Food Truck
      • Future development for on & off-site events
        • Timeline TBD

A summary of known deliverables and outputs are, but not limited to:

  • Menu and recipe development
  • Financial projections incorporating menu development
  • Staffing and hiring
  • Specification of kitchen equipment, wares, supplies, and vendors.

Compensation:

The phases and outputs outlined above will be commissioned under contract based on deliverables, duration, and level of experience, with the opportunity for long-term, full-time employment upon completion.
